It is in the vineyards where our wine making process begins. 
It starts with our soil, vines & grapes.

We are recovering & reviving some old and abandoned vineyards around the island of Mallorca, and we have planted our own vines on the SOLU Finca, which will be ready to harvest in the next 3-5 years. Javi Cortes is our SOLU vigneron & winemaker. 

Javi’s wine making journey began just shy of 10 years ago, working vintages in Spain, Italy, France, New Zealand, South Africa & Turkey, as well as completing his master’s in France & Italy.


The philosophy is based on regenerative agriculture. It is about taking a stand and improving on the current ways of farming. We adapt and learn by using a toolbox of different practices such as cover cropping & biodynamic preparations. 


Our winemaking methods are by no means traditional & Javi has used many different techniques he has learnt throughout his winemaking career.  SOLU wine contains no added sulphites & we use methods that work in sync with nature & not against it.
